Cut & Run: a Duplicitous Distillery

The one you’ve been waiting for. Two sherry casks we managed to salvage from an undisclosed and unmentionable distillery in the Tasmanian Highlands, married together and finished for nearly four and a half years in one of our own Australian Apera casks. We know it’s definitely over ten years old, but we’re just not sure of exactly when the two casks were filled by the dastardly protagonist.  The result is so drinkable and complex. Long time coming but well worth waiting for.

Lovely nectar nose, very nice syrupy sweetness, apricot custard, sweet musk lolly notes. You decide!
